Wine Pure Santorini Volcanic Slopes Vineyards White. Volcanic Slopes Vineyards is the smallest winery on the island. The history of the winery began in the 18th century, where the canavas was established. In essence it was an underground cellar, made mainly of volcanic stones. In 2013 the canavas was completely renovated to house Volcanic Slopes Vineyards. The mind behind Pure is Mattheos Argyros, of Ktimas Argyros. To create Pure, the team at Volcanic Slopes Vineyards begins in the vineyard, with fine selection of the grapes during harvest. In order to achieve the highest expression of the terroir, correct ripeness of the fruit, fermentations with indigenous yeasts, minimal additions, no correction, inert maturation vessels and light filtration are followed. A rare wine with great personality and character, produced only in "great" years. Pure Santorini Wine has a yellow color with green highlights. Intense and fruity character with citrus and lime aromas. Nice balance in the mouth, full bodied with a sense of minerality and a long aftertaste. Age it for 8-10 years.
