Wine Pyritis White Karamolegos Winery. Gentle, mineral nose with the characteristic scent of flint, typical of the Assyrtika wines of Santorini. Notes of ripe stone fruits and citrus fruits on a botanical background. Rich, exuberant but fine mouthfeel, with balanced acidity. Wine with a long, intensely salty and mineral aftertaste. Pyritis is a wine that is served decanted in a carafe to breathe and open properly, in order to highlight its complex character. It is drunk at 11-13 °C, combined with fatty dishes such as salmon carpaccio, shellfish risotto, lamb fricassee or even stuffed poultry. It ages for more than 10 years.
